ALECOST (COSTMARY) Tanacetum balsamita P   Tall herb with minty scent formerly used for flavouring beer.

ANGELICA  Angelica archangelica P or Bi   Statuesque back-of-the-border plant with good flavouring properties, for liqueurs, fruit compôtes, cakes. Young stems are delicious candied.

ANISE HYSSOP Agastache foeniculumP  Showy border plant with purple flower spikes and aniseed-scented leaves.

BALM, LEMON Melissa officinalis P  Medium height herb with good lemon scent and flavour. Nectar-rich flowers.

-----, GOLD VARIEGATED Melissa officinalis 'Aurea'   P   Gold-splashed foliage makes a patch of sunlight in Spring.

BASIL, SWEET Ocimum basilicum A   Spicy fragrance and wonderful flavour. Does best indoors or under glass in Ireland. Several kinds such as the excellent Greek basil available.

BAY, SWEET Laurus nobilis P  Aromatic, slightly tender evergreen tree reaching fifteen feet or more. Lends itself to clipping and training. The leaves are indispensable in the kitchen.

BERGAMOT (BEE-BALM) Monarda didyma   Decorative border plant. Attractive to bees. The leaves make Oswega tea, and lend an 'Earl Grey' flavour to Indian tea.

BETONY Betonica officinalisP   Pretty leaves. The flowers attract bees. A rare herb of medicinal and magical virtues.

BORAGE Borago officinalisA   Intense blue starry flowers are very decorative in salads, drinks and puddings. Mild cucumber flavour. Good bee plant. Self-seeds readily.

-----,            Borago pygmea P   Graceful stems with pendant blue flowers from a tidy rosette of leaves.

BOX Buxus sempervirens P   Slow-growing evergreen, traditional for formal hedges and topiary. Several types available, including B. sempervirens'Suffruticosa' and  'Aureovariegata'.

BUGLE Ajuga reptans P   A native species and traditional herbal remedy. A range of cultivars is available.

CATMINT Nepetax faassenii P   Spreading mats of grey leaves and blue flowers, good edging plant. Adored by cats; bees like it too.

-----, WILD (CATNEP) Nepeta cataria Taller wild catmint with white flowers, another favourite with cats and bees.

CHAMOMILE, WILD or GERMAN Matricaria recutita A   The dried flowers make an effective tisane for upset stomachs, and a brightening, conditioning rinse for fair hair.

-----, SINGLE-FLOWERED ROMAN Chamaemelum nobile P   Clean apple fragrance. Good ground cover plant with daisy-like flowers. Used medicinally like the annual species.

-----, DOUBLE-FLOWERED ROMAN C. nobile'Flore Pleno'   P   Similar to above, with double, cream flowers.

-----, NON-FLOWERING C.nobile'Treneague'  P   Tidier habit so is the best for lawns, seats and paths. Rooted offsets may be available in bulk, to order, for larger areas.

CHERVIL Anthriscus cerefolium A   Delicious aniseed flavour, much used in France as a culinary herb. One of the fines herbes, along with tarragon and chives. Very hardy, and self-seeding.

CHIVES Allium schoenoprasum P   Popular flavouring and garnishing herb, easily propagated by seed or by division of clumps. Several cultivars available.

-----, GIANT   P    Similar to chives but with larger foliage and flowers.

-----, CHINESE (GARLIC) Allium tuberosum P   Delicious garlic flavour. Starry white flower clusters on elegant stems.
-------------------, BLUE-FLOWERED  P   Pretty blue flowers and leaves which appear very early.

COMFREY, RUSSIAN Symphytumx uplandicum P   Tall, hairy, invasive plant with pendant purple flowers. Makes high potash mulch, compost and liquid feed for tomatoes.

CORIANDER Coriandrum sativum A   Fresh leaves much used in Indian and (as cilantro)in Mexican cookery. The seeds have a warm lemony aroma and are widely used as a kitchen spice.

COTTON LAVENDER Santolina chamaecyparissus P   Low to medium height, silver foliage. Good edging plant.

-----, S. pinnata neapolitana  Looser green-grey foliage, cream flowers.

-----, S. rosmarinifolia Bright green leaves and yellow flowers.

COWSLIP Primula veris  Garden seedlings for naturalising. We also have native N. Ireland stock.

CURRY PLANT Helichrysum angustifoliumP  Curry scent, good silver foliage, useful for colour contrast in a sunny border.
